Banana Pancakes (high protein, low fat, gluten free)
Saturday mornings are perfect for pancakes! It’s officially tradition at our house. Yummy, flavorful, and filling! I came up with this recipe a few years back, while trying to adapt our favorite Trim Healthy Mama pancake recipe to add bananas. I can’t say this perfectly aligns with the THM guidelines, but it is a family favorite now, and must be shared! Top with your favorite maple syrup!
Ingredients:
2 cups cottage cheese or greek yogurt
1 1/2 cups egg whites
3 cups rolled oats
2 teaspoons vanilla extract
2 teaspoons banana extract
3-4 bananas, ripe
2 Tablespoons baking powder
Directions:
In a blender, combine the cottage cheese, egg whites, rolled oats, extracts, and bananas; combine till well blended.
Add baking powder and pulse just until mixed in.
Pour onto your favorite griddle and enjoy!
Yield: 20-22 pancakes. 6-8 servings.
We get our maple syrup and vanilla extract through Amazon Subscribe & Save for a great price. For myself, since I’m currently trying to loose extra weight, I use Lakanta Sugar Free Maple Syrup, which is a natural, low glycemic, low calorie version. It really does not taste anything like maple syrup, but its a good alternative.
