Ministry from the Home – Freezer Meals

This past Friday, I invited a few single friends of mine over to make some freezer meals! These were special freezer meals…for they were to be given to a needy family in our church. The mother is bedridden with high blood pressure nearing the end of her pregnancy, while having five children currently to care for. The baby has a hole in his heart and will need surgery right away. They are also in the process of adopting five Liberian children, coming to the States any time. Please consider praying for the Klement family!

Why not have some productive fellowship and make some meals for this family? A great way to minister from my home and bring a few others along for the ride!

Here are some pictures from our days adventures! I had another friend, although not pictured, Holly, who came and helped me shop for groceries and begin the cooking process in the morning.

The finished product resulted in six freezer meals, even more than we expected! We made two each of chicken enchiladas, shepherd’s pie & Chicken Divan (broccoli, rice, chicken casserole). And they all had to be gluten-free as well! And they were oh so good! We even had enough for the three of us to enjoy a little dinner at the end of the day!

Know of anyone you could minister to in this way? Why not include others and have wonderful edifying fellowship! Little ones can be included as well!

    How tasty! I’m making this ahead of time and freezing for the community group we host. Do you bake the enchiladas frozen? And would it be for the same temperature and amount of time?

      You can do it either way. IT would be more ideal to dethaw and then cook at the regular temperature and time. But if you forget, you can cook frozen. You will have to likely double the baking time and make sure you keep it covered so as to avoid burning.

    Wow. Those are amazing. I am starting to learn how to be frugal, cooking in bulk, but am having difficulty seeing how everything have to be gluten-free for my son. Thank you so much for your blog post.

    Hi Lindsey, So much fun to see the productive day and see pictures of Megan too! I of course heard about your blog through her. I have enjoyed making freezer meals with/for friends quite a few times. As you found it helps a lot to know the specific family needs, likes and dislikes. Making meals can be so much fun. The other day with 8 friends and a young mom with heath issues we had a full day of baking that gave her several months of meals! Keep up your good work!

    A true blessing! I’d love your chicken divan recipe.I am taking dinner over to a family as they prepare to move out of state. Between our family and theirs,it will be 11 people. This recipe looks like it will feed that many.:)

    What a fun way to bless this family in their time of need! This is something I would love to do with some of my friends to spread some love! I will be asking God to give them health, strength, courage, and stamina in this stressful time!

    What a blessing those meals will be for that family. When I was pregnant with my 6th I was on bed rest for the last 2 months because of high blood pressure (which turned into severe post partum pre-eclampsia 2 days after my sons birth). My older children were between the ages of 8 & 2 AND we were trying to home school. Our church made meals for us too and it was a HUGE blessing!! I’ll be praying for that precious family!!

    What an awesome idea!! I’ve been wanting to do something similar for the homeless actually but hadn’t thought of teaming up with people to get it done. And will also pray that the Holy Spirit will reveal anyone that may be in a similar situation as your friend.

    What fun! Freezer cooking is a wonderful way to bless others. I had several ladies over the freezer cooking parties before and, in addition to blessing others with our work, what a good time we always had. :o ) A friend and I also did a little “freezer cooking class” of sorts for a two single mamas we know. Both of them enjoyed learning how this type of cooking and have shared with us how nice it is to have meals at the ready for rough days.
