Fabulous Meatloaf

Meatloaf is one of those warm comforting meal for cold weather, and a delicious satisfying meal at our house. Combining grass-fed beef, homemade bread crumbs, pastured eggs, and raw milk, and you have a full nutritious protein meal. We like to side this dinner with mashed potatoes and a fresh salad.

2 eggs
3/4 cup milk
2/3 cup bread crumbs (or make your own)
1/2 cup chopped onion
1 tsp salt
1 tsp rubbed sage
dash of pepper
1-1/2 pounds ground beef
1/2 cup ketchup
1/3 cup rapadura/sucanat, maple syrup (or 1/4 cup honey)
1 tsp vinegar

1. In a large bowl, beat eggs. Add milk, breadcrumbs, onion, salt, sage, and pepper. Add beef and mix well.
2. Shape into an 8-1/2 in x 4-1/2 in. loaf in an ungreased shallow loaf pan.
3. Combine remaining ingredients (sweetener, ketchup and vinegar); spread the mixture over meat loaf.
4. Bake at 350 degrees for 60-65 minutes or until no longer pink; drain.
5. Let stand for 10 minutes before slicing.

Yield: 6-8 servings.

    Hi Lindsey,

    I made this recipe last night and my husband and I both loved it! I botched it a little bit and only thawed a pound of meat so then I had to add extra breadcrumbs and it still turned out great. Thanks for the recipe!

    I have to say I LOVE this recipe! Seriously. I am not a meatloaf fan. I don’t really care for much beef in general. BUT THIS, WOW! My husband and I pretty much finished off the entire loaf by ourselves…………. I really think using good beef makes a huge difference, but I just had to come back and tell you how much I loved it! Thanks!

    This is absolutely delicious. I got distracted while I was mixing everything and accidentally mixed the glaze ingredients into the loaf. I think I’ll just make that mistake everytime! Also, I had no bread crumbs, nor time to make any, so I just tore 4 or 5 pieces of bread into small pieces, and let my mixer work it together with the milk. I made it into 8 mini loaves instead of a single large loaf. It was perfect for automatic portions, and pretty presentation. We are having company tonight, and I am going to make it again.     I tried it yesterday – formed 12 small loafs instead of one big sized. Hubby was delighted, he absolutely adores meat loafs.

    Just made this meat loaf last night! It was YUM! My mom and grandma stopped by for dinner…they were very impressed, as well! I don't usually like a ketchup-y sauce on my meat loaf…but this was delish! I also made the homemade bread crumbs! What a great thing! I don't use bread crumbs all that often…and I usually end up with bread that goes bad before it is used…so what a great solution! And it was super quick and easy!!

    Delish! Made this tonight (one for dinner, one for the freezer) and it was simply YUM! Thanks for the great recipe…it will be a permanent dinner in my rotation. (Oh, I made it with ground turkey and it turned out great!)

    Instead of bread crumbs, add finely chopped carrots to your meatloaf (food processor works well). This is great for those who can't tolerate wheat or for just getting more veggies into your picky eater's diet! I have done this for 20-plus years. I got the idea from my grandfather who pureed onions, carrots, & green peppers to add to the meatloaf he lovingly made for my grandmother as her health declined.

    I make a similar sauce for meatloaf. Mine is ketchup, rapadura and dry mustard powder. Yum!

    Can I just say, y-u-m?! My husband LOVES meatloaf, so I'm really looking forward to giving this a try.

    I never thought of making meatloaf with maple syrup, but I'm intrigued!
