If you use raw milk, you can make your own raw milk yogurt without even heating the milk (beyond preparing your starter) and it turns out amazingly thick and creamy. You can protect the majority of the delicate nutrients in raw milk this way! You only have to heat a small portion of milk to build your starter and from there you can add a bit of this starter to your raw milk and set it on the counter and it will culture in a matter of hours. It is the best homemade yogurt I have tried yet – rich and creamy. If you take proper care of your starter, you will only have to purchase the dehydrated starter once and away you go! The yogurt starter comes with very clear directions for using pasteurized or raw milk.

    We make yogurt and have mixed results (we keep the yogurt in the oven with the oven light on to keep it around 100 degrees).

    I am enjoying making yogurt for my family with commercial yogurt as my starter. It would be save so much time to be able to make room temperature yogurt though! So, Viili Yogurt starter would be my choice.

    I tried to make some cream cheese from raw milk using the nourishing traditions method, but it didn’t work out. The instructions don’t say how to cover the milk, so I put a lid on it. Have you tried this? any suggestions?

      You want to use a cheesecloth or a cloth napkin to cover your culturing products at all times otherwise it will not work or will just take a really long time to culture. You want it to have access to the good bacteria in the air to help with the culturing process. I use a cloth napkin secured with a rubber band around the top of my jars while culturing yogurt, kefir, or any of my soaking grains.

    The sourdough starters look yum! Especially the San Francisco, French, and Parisian!
