In my experience with making mayonnaise, if you don't have the one-drip-at-a-time thing for your food processor, you can also use a regular blender and just slowly drizzle the oil in through the hole in the lid. However, this is slow and requires too much cleanup for my taste, so I prefer to use a stick blender and make it right in the widemouth jar that I then store it in. With a stick blender you can combine all ingredients at once, there is no need to slowly drizzle the oil in. One key is to make sure that the eggs are room temp. You can warm them up in water if need be. Once when my eggs were too cold and it was to runny I let the mixture stand covered on the counter for half a day and came back and mixed it again and it worked just fine (I had added whey, with which the NT cookbook says to let it stand on the counter for 7 hours before refrigerating). It has always been thick and fluffy like store mayonnaise with the stick blender.

I made some mayo with a recipe similar to this but it was nothing but liquid. Any suggestions as to what I did wrong?

Good mayo, have been meaning to make it from NT and this was nice to read your suggestions too. Takes AGES to drip in the olive oil though if you don't have any attachment for your food processor! Ended up with a slow dribble so hope that did not affect it. Tastes good.

I make this recipe all the time, but I use half olive oil and half coconut oil. It doesn't have a bad flavor, and the coconut oil makes it a bit more firm, like store bought. My husband and I love it!

I just started making my own yogurt and am trying to master sourdough bread. I want to make more of our foods, so, this mayo recipe is something I will try. We are looking for more ways to simplify our lives and also to allow me to stay at home and improve the quality of our lives, so, it is a blessing to find your information.
